Using Xanthan Gum and Guar Gum in Gluten-Free Bread

Guar gum is extracted from guar beans. Like xanthan gum, guar gum is also used as a thickener in gluten-free baked goods, but it doesn’t exhibit the gelling properties of xanthan gum. Guar gum is a good emulsifier (it helps fat molecules blend) and is high in soluble fiber.

We wouldn’t suggest trying to mimic bread flour by combining all-purpose flour with xanthan gum, as xanthan gum wouldn’t strengthen the gluten, it would just add another starchy component. Instead, you can use all-purpose flour in a recipe that calls for bread flour, you just need to reduce the water by about 1-2 teaspoons for every cup of flour.
